Chef Joshua Acquaviva, head of the kitchen at Park Hyatt Milan’s Pellico 3, will host a ten-day residency at Alila Kothaifaru Maldives from October 25 to November 3, 2026. Based in the Raa Atoll, the resort is known for its commitment to preserving the island’s natural landscape and sustainable luxury. During his visit, Acquaviva will collaborate with Executive Chef Frank Wackerhagen at Pibati Sul Mare, the resort’s beachside Italian restaurant, to showcase his Neapolitan culinary heritage.
The residency focuses on blending traditional Italian techniques with fresh produce harvested from the island’s own gardens. Guests can sample dishes emphasizing handcrafted pasta and artisanal pizza, reflecting Acquaviva’s background in Michelin-starred establishments. Beyond the dining room, the residency includes intimate, small-group pizza-making workshops at the restaurant counter, offering attendees direct insight into the chef’s technical process. This exchange aims to marry the precision of Milanese fine dining with the relaxed, coastal atmosphere of the Maldives.
