Sun Siyam Iru Veli recently hosted Czech chef Jan Punčochář for a week-long culinary residency held from July 25 to August 1, 2026. Organized in collaboration with Colours of Maldives, the event centered on the resort’s overwater restaurant, Roma, where the chef showcased his signature approach to Mediterranean and Italian-inspired cuisine. Situated in the Dhaalu Atoll, the luxury retreat offers an expansive selection of private-pool villas and diverse dining venues.
The residency featured a dedicated Chef’s Table on July 31, where guests enjoyed a bespoke menu blending traditional Czech culinary methods with local Maldivian ingredients. Beyond the dining room, Chef Punčochář engaged with guests during a cocktail evening and spent time mentoring the resort’s kitchen staff to foster a professional exchange of techniques. This initiative is part of a broader program at Sun Siyam Resorts designed to bring international culinary expertise to the islands while enhancing the development of their internal culinary teams.
