Banyan Tree Vabbinfaru, in the North Male Atoll, is hosting a month-long Southern Thai dining residency at its signature restaurant, Saffron, from 17 June to 17 July 2026. The limited-time menu is created by visiting guest chef Tipa, head of Saffron at Banyan Group, who is in residence on the island from 15 to 19 June.
Titled A Southern Thailand Gastronomic Experience, the menu reinterprets the region's cuisine through contemporary technique, with signature dishes including Gai Yang Kor Lae, charcoal-grilled chicken with Southern-style peanut sauce, and a green-curry grilled beef tenderloin. Guests can also join hands-on Thai cooking classes on 17 and 18 June.
Saffron was added to Banyan Tree Vabbinfaru in 2024 as part of a wider renovation that expanded the resort to three restaurants and two bars, and retains signature touches such as its hand-washing ritual and Rice Master selection.
