Azur at JEN Maldives Malé has unveiled a redesigned culinary menu that emphasizes sustainability, local provenance, and global inspiration. Perched on the hotel’s rooftop, the restaurant offers a panoramic view of the capital’s surrounding waters, providing a relaxed atmosphere that mirrors the brand’s contemporary identity. The refreshed dining concept centers on the Rooted in Nature initiative, with over half of the kitchen’s produce sourced directly from Maldivian farmers and fishermen to minimize environmental impact while supporting the local economy.
The new offerings, developed by Chef Hardik Trehan and the pastry team, prioritize ingredient clarity and intentional craftsmanship. Dishes range from savory plates that highlight regional textures to creative desserts featuring island staples like screw pine, coconut, and local bananas. By blending traditional Maldivian elements with international techniques, the menu aims to offer guests a dining experience that feels both familiar and distinctly connected to its island setting.
